🍰 Fluffy Eggnog Raspberry Muffins from the Air Fryer

Ingredients
- 1 Egg
- 50 g Sugar (or Erythritol)
- 1 pkg. Vanilla Sugar
- 65 g Flour
- 0.5 tsp Baking Powder
- 65 ml Oil
- 65 ml Eggnog
- 18 Raspberries (frozen or fresh)
Instructions
- 1. Preheat the air fryer to 160 °C.
- 2. Beat one egg, sugar, and vanilla sugar in a bowl with a mixer or whisk until the mixture is very frothy and light.
- 3. Mix flour and baking powder in a small container.
- 4. Stir in the flour mixture, oil, and eggnog alternately into the egg mixture until a smooth batter forms.
- 5. Divide the batter evenly among 6 silicone muffin cups.
- 6. Place three fresh raspberries on top of each muffin and press them slightly into the batter.
- 7. Place the cups in the air fryer and bake the muffins at 160 °C for 18 minutes.
- 8. Lower the temperature to 140 °C and bake for another 4 minutes until golden brown.
- 9. Carefully remove the muffins from the air fryer and let them cool for a moment.
- 10. Optional: You can also bake the batter in a conventional oven. Set the oven to 180 °C top and bottom heat and bake the muffins for 25 minutes.
