🍰 Fluffy Strawberry Yogurt Muffins from the Air Fryer

Ingredients
- 8 tbsp sunflower oil
- 100 g sugar
- 2 egg(s), size M
- 200 g yogurt, Greek-style
- 1 tsp lemon juice
- 250 g wheat flour
- 2 tsp baking powder
- 1 pkg vanilla pudding powder
- 1 pinch(es) salt
- 1 bar chocolate, white
- 200 g strawberries
- a little powdered sugar
Instructions
- 1. Whisk the oil and sugar in a large bowl until well combined.
- 2. Add the eggs, yogurt, and lemon juice to the mixture and stir until incorporated.
- 3. In a separate bowl, mix the flour, baking powder, pudding powder, and salt.
- 4. Add the liquid mixture to the dry ingredients and whisk with a whisk until a smooth batter forms.
- 5. Let the batter rest briefly to help it bind better.
- 6. Roughly chop the well-chilled chocolate.
- 7. Hull the strawberries and cut them into large pieces or quarters.
- 8. Gently fold two-thirds of the strawberries and the chocolate pieces into the batter.
- 9. Distribute the batter using a large spoon into 12 muffin cups.
- 10. Distribute the remaining strawberries on top of the muffins.
- 11. Preheat the air fryer to 160 °C and bake the muffins for 20 minutes until crispy.
- 12. Let the muffins cool down for about one hour.
- 13. Place the cooled muffins in the refrigerator until they reach room temperature.
- 14. Dust powdered sugar over the muffins and serve.
