🍽️ Crispy Lamb with Roasted Vegetables from the Air Fryer

Ingredients
- 0.5 bell pepper(s)
- 0.5 zucchini
- 3 mushrooms
- 5 small potatoes
- 1 onion(s)
- 2 garlic clove(s)
- 5 lamb chops (marinated)
- 1 tbsp olive oil
- 1 tsp spice mix (e.g. Italian Allrounder, or similar)
Instructions
- 1. Cut the vegetables and small potatoes (drilling potatoes) into bite-sized pieces.
- 2. Finely dice the onion and the garlic cloves.
- 3. Place the vegetables, onions, and garlic in a bowl.
- 4. Drizzle olive oil over them and sprinkle the spice mix evenly on top.
- 5. Mix everything well so that everything is evenly coated.
- 6. Let the vegetables marinate for two hours to absorb the flavors.
- 7. Preheat the air fryer to 170 °C.
- 8. Place the marinated vegetables in the air fryer basket.
- 9. Cook the vegetables for 15 minutes at 170 °C.
- 10. Place the marinated lamb racks on a rack that you position directly over the vegetables in the air fryer.
- 11. Increase the temperature to 180 °C and roast the lamb until crispy for 7 minutes.
