Ingredients
- 0.5 cauliflower (florets separated)
- 1 sweet potato(es)
- 2 tbsp olive oil
- 1 bell pepper(s), red
- 1 onion(s), red
- 1 can chickpeas (400 g each)
- 3 garlic clove(s) (finely chopped)
- 1 tbsp coriander powder
- 1 tbsp cumin powder
- 0.5 tsp cinnamon powder
- to taste chili flakes
- to taste salt and pepper
- 1 cup yogurt (vegan or vegetarian)
- 0.5 lemon(s)
- 100 g sultanas
Instructions
- 1. Preheat your oven to 200 degrees Celsius using top and bottom heat. Place the cauliflower florets and the diced sweet potatoes on a baking sheet. Drizzle with olive oil and massage it well into the vegetables. Bake the ingredients for 15 minutes.
- 2. While the vegetables are baking, mix all the ingredients for the spice blend in a small bowl.
- 3. Cut the bell peppers and red onions into large chunks. Drain the chickpeas. Distribute the pepper pieces, chickpeas, and onions on the baking sheet. Coat everything with the prepared spice mixture. Bake the tray for another 20 minutes in the oven.
- 4. Garnish the dish to taste with vegan yogurt, lemon wedges, and raisins. Serve with rice, bulgur, or couscous.
