🍽️ Crispy Meat Skewers with Roasted Vegetables and Mint Yogurt from the Air Fryer

Ingredients
- 250 g ground pork
- some cheese, grated
- 1 tbsp breadcrumbs
- 1 tsp mustard
- 1 onion(s)
- 2 garlic clove(s)
- 1 egg yolk
- 0.5 bell pepper(s), red
- 1 small zucchini
- 4 shallots
- 150 g plain yogurt
- some mint leaves
- to taste salt and pepper
- cumin
- 1 tsp olive oil
- to taste herbs, Italian (or similar)
- possibly lemon juice
Instructions
- 1. Preheat the air fryer to 180 °C.
- 2. Mix the minced meat with the half chopped onion, the egg yolk, the breadcrumbs, the grated cheese, the mustard, pepper, salt, and cumin.
- 3. Form small balls from the meat mixture and thread them onto the skewers.
- 4. Cut your chosen vegetables (e.g., peppers, zucchini, onion rings, and garlic slices) into bite-sized pieces.
- 5. Place the vegetables in a baking dish, drizzle with olive oil, and season with herbs.
- 6. Let the seasoned vegetables rest for 30 minutes.
- 7. For the sauce, stir together the natural yogurt, the finely chopped garlic, and the chopped mint.
- 8. Season the yogurt sauce with salt, pepper, and optionally lemon juice, and let it rest for 30 minutes as well.
- 9. Place the meat skewers on top of the prepared vegetables in the baking dish.
- 10. Cook everything for 20 minutes at 180 °C in the air fryer.
- 11. Stir the vegetables once after 10 minutes to ensure even cooking.
