🍽️ Crispy Chicken from the Air Fryer

Ingredients
- 900 g chicken wings (chicken thighs or chicken breast)
- olive oil
- 2 egg(s)
- 1 tsp sauce (hot, e.g. Tabasco)
- 2 tbsp milk (or buttermilk)
- 60 g water
- 140 g flour (with baking powder or baking soda (self rising flour))
- 40 g cornstarch
- 2 tsp salt
- 1.5 tsp pepper, black
- 1.5 tsp garlic powder
- 1.5 tsp paprika powder
- 1 tsp onion powder
- 1 tsp herbs, Italian (dried)
Instructions
- 1. If you do not have self-rising flour, mix 375 grams of flour with 3 teaspoons of baking powder and one-third teaspoon of salt. Weigh out exactly 140 grams of this mixture for this recipe.
- 2. Wash the chicken pieces and pat them dry with a kitchen towel. Mix the spices together in a small bowl. Sprinkle about one tablespoon of this spice mix over the meat, add a good splash of olive oil, and massage everything in well.
- 3. Whisk the eggs, hot sauce, milk, and water together vigorously in a separate bowl using a fork or whisk.
- 4. Place the weighed flour-spice mixture into a freezer bag. Add the cornstarch and the remaining spice mix, then shake the bag until everything is evenly combined. Place the chicken pieces into the bag one by one, shake to coat them well, and shake off excess flour. Let the meat rest for 10 minutes.
- 5. Dip the coated chicken pieces briefly into the egg mixture and let the excess liquid drip off for a moment. Then coat them again in the flour mixture from the bag. Spray or brush the pieces with olive oil and set them aside.
- 6. Preheat the air fryer to 180 °C. Place the chicken pieces inside and cook them for 18 minutes until golden brown and crispy. Keep the finished pieces warm in the oven if necessary.
