🍽️ Juicy Bacon-Wrapped Meatloaf from the Air Fryer

Ingredients
- 350 g minced meat, mixed
- 1 egg yolk
- 1 tbsp whipping cream
- 1 tbsp, heaping breadcrumbs
- 1 tsp mustard, medium-hot
- 1.5 shallot(s)
- 200 ml red wine
- 200 ml water
- 1 tbsp, level tomato paste
- 1 tbsp gravy sauce (from a tube, e.g. from Knorr)
- 2 garlic clove(s)
- 6 cocktail tomatoes
- 3 slice(s) bacon
- cumin powder
- salt and pepper
Instructions
- 1. Place the minced meat, egg yolk, breadcrumbs, whipping cream, mustard, half of the finely chopped shallot, cumin powder, and your favorite spices into a large bowl.
- 2. Knead all ingredients thoroughly by hand until you have a uniform mixture.
- 3. Shape the meat mixture into a compact loaf.
- 4. Wrap slices of bacon tightly around the entire loaf.
- 5. Place the loaf into a heatproof dish that fits inside your air fryer.
- 6. Whisk red wine, water, tomato paste, and sauce extract together in a small bowl until the sauce is smooth.
- 7. Carefully pour the sauce around the loaf in the dish, ensuring it surrounds the meat to a height of about 2 cm.
- 8. Distribute roughly chopped pieces of the remaining shallot and garlic cloves around the loaf in the sauce.
- 9. Place a few whole cherry tomatoes next to the loaf in the dish.
- 10. Preheat your air fryer to 180 °C and place the dish inside.
- 11. Cook the meatloaf for 35 minutes at 180 °C until it is fully cooked and the bacon is crispy.
