  1. 1. Place the minced meat, egg yolk, breadcrumbs, whipping cream, mustard, half of the finely chopped shallot, cumin powder, and your favorite spices into a large bowl.
  2. 2. Knead all ingredients thoroughly by hand until you have a uniform mixture.
  3. 3. Shape the meat mixture into a compact loaf.
  4. 4. Wrap slices of bacon tightly around the entire loaf.
  5. 5. Place the loaf into a heatproof dish that fits inside your air fryer.
  6. 6. Whisk red wine, water, tomato paste, and sauce extract together in a small bowl until the sauce is smooth.
  7. 7. Carefully pour the sauce around the loaf in the dish, ensuring it surrounds the meat to a height of about 2 cm.
  8. 8. Distribute roughly chopped pieces of the remaining shallot and garlic cloves around the loaf in the sauce.
  9. 9. Place a few whole cherry tomatoes next to the loaf in the dish.
  10. 10. Preheat your air fryer to 180 °C and place the dish inside.
  11. 11. Cook the meatloaf for 35 minutes at 180 °C until it is fully cooked and the bacon is crispy.
