  1. 1. Score the pork rind in a cross pattern using a sharp knife or scalpel. Ensure the depth of the cuts matches the desired thickness of the final slices.
  2. 2. Rub the meat sides (except the rind) with cumin, BBQ seasoning, and salt. Turn the meat over and press the remaining salt and cumin mixture firmly into the cuts in the rind.
  3. 3. Place the meat in the air fryer. Roast at 160 °C for 60 minutes if it is thick. Then increase to 200 °C and roast for another 10 to 15 minutes for a crispy crust. For flat meat, roast at 180 °C for 40 minutes and return to 200 °C for a few minutes if needed.
  4. 4. Remove the meat and let it rest briefly. Slice it and serve on rolls or with roasted vegetables. Use leftovers the next day for Gröstl or Kung Bao.
