Ingredients
- 200 g flour
- 1 tsp salt
- 130 ml water (hot)
- 1 kg mushrooms (mixed (porcini, button mushrooms, chanterelles, king oyster mushrooms, jack-o'-lantern mushrooms, panus
- 2 shallot(s)
- 2 clove(s) of garlic
- 8 stalks flat-leaf parsley
- 1 bunch cilantro
- sherry
- 1 tbsp miso paste
- salt and pepper
- chili flakes
- sunflower oil
- soy sauce
- sesame (toasted)
Instructions
- 1. This recipe yields 32 dim sum.
- 2. Put flour and salt into a bowl.
- 3. Pour in hot water.
- 4. Stir the ingredients with two chopsticks until they combine.
- 5. Knead the mixture vigorously by hand for several minutes.
- 6. Shape the mixture into a ball.
- 7. Cover the ball.
- 8. Let the dough rest for at least 60 minutes.
- 9. Clean the mushrooms.
- 10. Cut the mushrooms into coarse pieces.
- 11. Peel the shallots.
- 12. Peel the garlic cloves.
- 13. Dice the shallots and garlic finely.
- 14. Wash the herbs.
- 15. Shake the herbs dry.
- 16. Cut the herbs into thin strips.
- 17. Heat some sunflower oil in a hot pan.
- 18. Fry the mushrooms vigorously.
- 19. Add the shallots and garlic.
- 20. Cook the shallots and garlic together.
- 21. Wait until the mushrooms have collapsed.
- 22. Wait until the liquid has evaporated.
- 23. Deglaze the mixture with a splash of sherry.
- 24. Let the sauce reduce.
- 25. Stir in the miso paste.
- 26. Stir in the herbs.
- 27. Season with chili flakes.
- 28. Season with salt.
- 29. Season with pepper.
- 30. Remove the mushroom mixture from the pan.
- 31. Roughly chop the mushroom mixture several times on a board with a knife.
- 32. Place the mushroom mixture in a bowl.
- 33. Place the bowl in the refrigerator for about 30 minutes.
- 34. Take the dough out of the refrigerator.
- 35. Divide the dough ball into 8 equal pieces.
- 36. Form 4 small balls from each piece.
- 37. You now have a total of 32 dough balls.
- 38. Flour a work surface.
- 39. Roll the dough balls into small round discs.
- 40. Roll the discs with a rolling pin to a thickness of about 1 to 2 mm.
- 41. Place the finished dim sum in an oiled steamer insert.
- 42. Steam the dim sum for about 7 to 9 minutes.
- 43. Mix soy sauce with toasted sesame seeds.
- 44. Use the mixture as a dipping sauce.
