  1. 1. Preheat the oven to 220 degrees Celsius with fan (or 250 degrees Celsius with top and bottom heat).
  2. 2. Place a pizza stone or an inverted baking sheet in the oven if you have one.
  3. 3. Mix all dough ingredients to form a kneadable dough.
  4. 4. Let the dough rest for 30 minutes.
  5. 5. Peel the potatoes.
  6. 6. Boil the potatoes in salted water for about 15 minutes.
  7. 7. Drain the potatoes.
  8. 8. Let the potatoes cool down.
  9. 9. Slice the cooled potatoes into thin rounds.
  10. 10. Stir the crème fraîche together with the cream cheese.
  11. 11. Season the crème fraîche mixture with salt and pepper.
  12. 12. Cut the Black Forest ham into strips.
  13. 13. Wash the spring onions.
  14. 14. Pat the spring onions dry.
  15. 15. Slice the white and green parts of the spring onions into thin rings.
  16. 16. Wash the arugula.
  17. 17. Spin the arugula dry.
  18. 18. Form four equal-sized balls from the dough.
  19. 19. Sprinkle some flour on a work surface.
  20. 20. Roll out the dough balls thinly on the floured surface.
  21. 21. Spread the crème fraîche mixture over the dough bases.
  22. 22. Distribute the potato slices evenly over the dough.
  23. 23. Place the Black Forest ham on top of the potatoes.
  24. 24. Add ricotta to the flammkuchen.
  25. 25. Sprinkle the cut spring onions over the top.
  26. 26. Bake the flammkuchen in the hot oven for about 6 to 10 minutes.
  27. 27. Remove the flammkuchen from the oven when they are crispy.
  28. 28. Garnish the flammkuchen with the dry arugula.
  29. 29. Grate fresh parmesan over the flammkuchen.
  30. 30. Season the flammkuchen with a little salt.
