🍰 Crispy Flammkuchen with Potatoes, Ham, and Arugula

Ingredients
- 4 tbsp oil
- 250 ml water
- 2 pinch(es) salt
- 500 g flour
- 4 potatoes, waxy
- 300 g crème fraîche (or sour cream)
- 3 tbsp double cream cheese
- 16 slice(s) Black Forest ham
- 1 bunch spring onion(s)
- 1 small bowl arugula
- 200 g ricotta
- 1 piece Parmesan
- salt and pepper
Instructions
- 1. Preheat the oven to 220 degrees Celsius with fan (or 250 degrees Celsius with top and bottom heat).
- 2. Place a pizza stone or an inverted baking sheet in the oven if you have one.
- 3. Mix all dough ingredients to form a kneadable dough.
- 4. Let the dough rest for 30 minutes.
- 5. Peel the potatoes.
- 6. Boil the potatoes in salted water for about 15 minutes.
- 7. Drain the potatoes.
- 8. Let the potatoes cool down.
- 9. Slice the cooled potatoes into thin rounds.
- 10. Stir the crème fraîche together with the cream cheese.
- 11. Season the crème fraîche mixture with salt and pepper.
- 12. Cut the Black Forest ham into strips.
- 13. Wash the spring onions.
- 14. Pat the spring onions dry.
- 15. Slice the white and green parts of the spring onions into thin rings.
- 16. Wash the arugula.
- 17. Spin the arugula dry.
- 18. Form four equal-sized balls from the dough.
- 19. Sprinkle some flour on a work surface.
- 20. Roll out the dough balls thinly on the floured surface.
- 21. Spread the crème fraîche mixture over the dough bases.
- 22. Distribute the potato slices evenly over the dough.
- 23. Place the Black Forest ham on top of the potatoes.
- 24. Add ricotta to the flammkuchen.
- 25. Sprinkle the cut spring onions over the top.
- 26. Bake the flammkuchen in the hot oven for about 6 to 10 minutes.
- 27. Remove the flammkuchen from the oven when they are crispy.
- 28. Garnish the flammkuchen with the dry arugula.
- 29. Grate fresh parmesan over the flammkuchen.
- 30. Season the flammkuchen with a little salt.
- 31. Add a little freshly ground pepper.
