🍰 Moist Apple-Orange Cake with Cranberries

Ingredients
- 2 Apples
- 2 tbsp Lemon juice
- 1 Egg
- 50 g Butter, soft
- 40 g Sugar
- 110 g Spelt flour Type 630
- 50 g Almonds, ground
- 1 tsp, level Baking powder
- 0.25 tsp Baking soda
- 0.5 tsp Cinnamon
- 1 Pinch(es) Salt
- 125 ml Orange juice (freshly squeezed)
- 80 g Cranberries (jar)
Instructions
- 1. Wash the apples thoroughly.
- 2. Remove the core and cut the flesh into small cubes.
- 3. Place the apple cubes in a bowl and drizzle with lemon juice.
- 4. Beat the egg loosely in a large mixing bowl.
- 5. Add the soft butter and sugar to the egg mixture.
- 6. Mix everything with a mixer or whisk until the mass is smooth and creamy.
- 7. In a separate bowl, mix the flour, ground almonds, baking powder, baking soda, cinnamon, and salt.
- 8. Add the dry ingredients to the egg-butter mixture.
- 9. Stir everything gently until no more flour is visible.
- 10. Stir the orange juice into the batter.
- 11. Gently fold in the diced apples and cranberries.
- 12. Line a loaf pan (approx. 20 x 12 cm) with baking paper.
- 13. Pour the batter into the prepared pan.
- 14. Place the pan in the drawer of the Ninja Dual Zone.
- 15. Preheat the air fryer to 140 °C and bake the cake for 45 minutes in „Bake“ mode.
- 16. Increase the temperature to 160 °C and bake the cake for another 15 minutes in „Bake“ mode.
- 17. Turn off the device and let the cake rest for 10 minutes in the closed drawer.
- 18. Remove the cake from the pan.
- 19. Let the cake cool completely on a wire rack.
