🍽️ Crispy Asparagus Tart with Goat Cheese

Ingredients
- 3 tbsp olive oil
- 1 sheet puff pastry (from the refrigerated section, 270 g)
- 600 g asparagus, green
- 200 g crème fraîche
- 2 egg(s)
- 2 tbsp parmesan, freshly grated
- salt and pepper
- nutmeg
- 140 g feta cheese (made from goat's milk)
- 0.5 lemon, juice from it
- mint leaves (for decoration)
Instructions
- 1. Preheat the oven to 180 degrees Celsius with fan setting.
- 2. Place the puff pastry on a baking sheet.
- 3. Lift the dough edge about 1 to 2 cm high to form a small rim.
- 4. Wash the asparagus thoroughly.
- 5. Cut off the hard, woody ends of the asparagus spears.
- 6. Put crème fraîche, grated Parmesan, and eggs into a bowl.
- 7. Whisk the ingredients well together.
- 8. Season the mixture with pepper, salt, and a pinch of nutmeg.
- 9. Spread the cream evenly over the puff pastry base.
- 10. Place the prepared asparagus spears on the cream.
- 11. Distribute the goat cheese in thin slices or crumbled pieces over the asparagus.
- 12. Drizzle some olive oil and lemon juice over the tart.
- 13. Sprinkle a little more salt and pepper over it.
- 14. Place the tart on the middle rack in the oven.
- 15. Bake the tart for about 25 minutes.
- 16. Remove the tart when it is golden brown.
- 17. Cut the tart into suitable pieces.
- 18. Garnish the pieces with fresh mint leaves if desired.
