  1. 1. Turn on your oven and set it to 210 degrees Celsius with top and bottom heat.
  2. 2. Peel the white asparagus and cut the spears in half.
  3. 3. Parboil the white asparagus briefly in salted water.
  4. 4. Trim the ends off the green asparagus and cut the spears in half as well.
  5. 5. Season the crème fraîche with nutmeg, salt, and pepper.
  6. 6. Finely chop the garlic.
  7. 7. Stir the chopped garlic into the seasoned crème fraîche.
  8. 8. Place the puff pastry on a baking sheet and roll it out flat.
  9. 9. Cut the dough once across and twice lengthwise to create six rectangles.
  10. 10. Make an L-shaped cut in each corner of each rectangle parallel to the edge.
  11. 11. Spread one tablespoon of the crème fraîche onto each pocket.
  12. 12. Roll two halves each of white and green asparagus in bacon.
  13. 13. Place the wrapped asparagus bundles in the center of each pocket.
  14. 14. Fold the corners of the pockets over each other to seal them.
  15. 15. Brush the sealed pockets with beaten egg.
  16. 16. Bake the asparagus pockets for about 15 minutes until golden brown.
