🍽️ Crispy Asparagus Puff Pastry Pockets

Ingredients
- 1 roll(s) puff pastry (from the refrigerated section, 270 g)
- 6 slice(s) bacon
- 6 stalk(s) asparagus, green
- 6 stalk(s) asparagus, white
- 1 clove(s) garlic
- 150 g crème fraîche
- 1 egg(s) (for brushing)
- 1 pinch(es) nutmeg
- salt and pepper
Instructions
- 1. Turn on your oven and set it to 210 degrees Celsius with top and bottom heat.
- 2. Peel the white asparagus and cut the spears in half.
- 3. Parboil the white asparagus briefly in salted water.
- 4. Trim the ends off the green asparagus and cut the spears in half as well.
- 5. Season the crème fraîche with nutmeg, salt, and pepper.
- 6. Finely chop the garlic.
- 7. Stir the chopped garlic into the seasoned crème fraîche.
- 8. Place the puff pastry on a baking sheet and roll it out flat.
- 9. Cut the dough once across and twice lengthwise to create six rectangles.
- 10. Make an L-shaped cut in each corner of each rectangle parallel to the edge.
- 11. Spread one tablespoon of the crème fraîche onto each pocket.
- 12. Roll two halves each of white and green asparagus in bacon.
- 13. Place the wrapped asparagus bundles in the center of each pocket.
- 14. Fold the corners of the pockets over each other to seal them.
- 15. Brush the sealed pockets with beaten egg.
- 16. Bake the asparagus pockets for about 15 minutes until golden brown.
