🍰 Zebra Cake in the Power AirFryer by fauvelinchen

Ingredients
- 3 Egg(s), size M
- 1 Pinch(es) Salt
- 60 ml Water, lukewarm
- 120 ml Oil
- 120 g Sugar
- 180 g Flour
- 1 tsp, level Baking Soda
- 1 tbsp, heaped Cocoa Powder (dark)
- 70 Dark Chocolate Couverture
- 10 g Vegetable Fat (Palmin)
Instructions
- 1. Separate the eggs. Carefully separate the yolk from the egg white.
- 2. Add a pinch of salt to the egg white.
- 3. Whip the egg white with the salt until it forms stiff peaks.
- 4. Place the egg yolk in a separate bowl.
- 5. Stir the sugar and water into the egg yolk until the mixture is creamy.
- 6. Pour the oil slowly into the egg yolk mixture while stirring constantly.
- 7. Mix the flour and baking soda together in a small bowl.
- 8. Add the stiffly whipped egg white to the egg yolk mixture.
- 9. Sift the flour mixture over the batter.
- 10. Gently fold the ingredients together until a uniform batter forms.
- 11. Divide the batter into two equal portions.
- 12. Sift the cocoa powder into one of the two portions.
- 13. Stir the cocoa into the portion until it is fully incorporated.
- 14. Grease a small springform pan (18 cm diameter, 8 cm height) with butter.
- 15. Place two tablespoons of the light batter into the center of the pan.
- 16. Place two tablespoons of the dark batter directly next to it in the pan.
- 17. Repeat the alternating filling process until all the batter is used up.
- 18. Place the pan on the rack.
- 19. Slide the rack into the second shelf position of the Power AirFryer.
- 20. Bake the cake at 160 °C for approx. 30 minutes.
- 21. Melt the chocolate coating with the palm oil in a double boiler.
- 22. Pour the melted mixture over the warm cake immediately after baking.
