  1. 1. Drain the mushrooms and let them drip dry.
  2. 2. Wash all the vegetables thoroughly.
  3. 3. Peel the onion and cut it into small cubes.
  4. 4. Add half a spoonful of oil to the Actifry bowl.
  5. 5. Add the chopped onions to the bowl.
  6. 6. Set the Actifry timer to 5 minutes.
  7. 7. Remove the seeds from the bell pepper and cut it into bite-sized pieces.
  8. 8. Cut the zucchini into bite-sized pieces as well.
  9. 9. Once the 5 minutes for the onions are up, add the bell pepper and zucchini to the bowl.
  10. 10. Set the Actifry timer to 10 minutes.
  11. 11. Season the vegetables with salt, rosemary, thyme, and oregano.
  12. 12. Cut the eggplant into small cubes.
  13. 13. After the 10 minutes are up, add the eggplant and mushrooms to the bowl.
  14. 14. Set the Actifry timer to another 10 minutes.
  15. 15. Cut the mozzarella into small pieces.
  16. 16. After the additional 10 minutes, add the mozzarella to the vegetables.
  17. 17. Let the cheese melt for 2 minutes.
  18. 18. Serve the dish with Ebly, rice, or baguette.
