🍽️ Crunchy Whole Grain Fitness Bread from the Air Fryer

Ingredients
- 150 g whole wheat flour
- 150 g whole rye flour
- 1 tbsp agave nectar (or maple syrup)
- 1 pkg. dry yeast
- 125 ml water (approx.)
- 40 g walnuts (coarsely chopped)
- 35 g sunflower seeds
- 50 g cranberries
- 1 tsp flaxseed oil
- 1 tsp, level salt
- 0.5 tsp fennel seeds (ground)
- 0.5 tsp cumin powder
- 0.5 pkg. sourdough extract
- water (for brushing)
Instructions
- 1. Sift the flour into a large bowl.
- 2. Mix the dry yeast evenly into the flour.
- 3. Add the agave syrup and oil to the bowl.
- 4. Pour in about 1/8 liter of lukewarm water.
- 5. Knead everything into a smooth dough.
- 6. If the dough feels too firm, knein in a little more water.
- 7. Add the walnuts, cranberries, and sunflower seeds to the dough.
- 8. Add the salt, fennel, and cumin as well.
- 9. Knead the ingredients well into the dough.
- 10. Cover the bowl and place it in a warm spot.
- 11. Let the dough rise for 30 minutes.
- 12. Grease a 20-centimeter loaf pan.
- 13. Transfer the dough into the prepared pan.
- 14. Cover the pan and let the dough rise for another 40 minutes.
- 15. Preheat the air fryer to 200 °C.
- 16. Place the dough in the air fryer basket.
- 17. Bake the bread for 5 minutes at 200 °C.
- 18. Lower the temperature to 180 °C.
- 19. Bake the bread for another 55 minutes at 180 °C.
- 20. Brush the bread with water occasionally during baking.
- 21. This ensures a nicely shiny crust.
