🍽️ One-Pot Spätzle with Smoked Tofu

Ingredients
- 1 packet HENGLEIN Fresh Egg Spätzle (400 g)
- 300 g baby leaf spinach
- 250 g mushrooms
- 200 g smoked tofu
- 1 tbsp vegetable oil
- 3 tbsp fried onions
- 80 ml broth
- 200 ml cream
- salt and pepper (freshly ground)
- 50 g mozzarella (grated)
Instructions
- 1. Wash the spinach thoroughly. Clean the mushrooms and slice them into thick pieces. Cut the smoked tofu into small cubes. Heat some oil in a large pot and fry the mushrooms and tofu all around for about 3 minutes.
- 2. Add the spinach and onions and fry everything for another 3 minutes. Deglaze the pot with broth and cream. Add the spätzle, season with salt and pepper, and let the mixture simmer covered on low heat for 5 to 10 minutes.
- 3. Sprinkle the mozzarella over the spätzle, stir briefly, and serve the dish immediately.
