  1. 1. Wash the spinach thoroughly. Clean the mushrooms and slice them into thick pieces. Cut the smoked tofu into small cubes. Heat some oil in a large pot and fry the mushrooms and tofu all around for about 3 minutes.
  2. 2. Add the spinach and onions and fry everything for another 3 minutes. Deglaze the pot with broth and cream. Add the spätzle, season with salt and pepper, and let the mixture simmer covered on low heat for 5 to 10 minutes.
  3. 3. Sprinkle the mozzarella over the spätzle, stir briefly, and serve the dish immediately.
