🍰 Fluffy Fanta Cake with Mandarin Cream Topping

Ingredients

- 300 g sugar
- 1 packet vanilla sugar
- 350 g flour
- 1 packet baking powder
- 125 ml oil, neutral
- 175 ml Fanta
- fat for the baking sheet
- 3 can(s) mandarin(s) (175 g each)
- 600 g whipping cream
- 5 packet(s) vanilla sugar
- 3 packet(s) cream stabilizer
- 500 g sour cream
- optional cinnamon sugar (for sprinkling)
Instructions
- 1. Beat the eggs, sugar, and vanilla sugar with a mixer until the mixture is airy and frothy.
- 2. Mix the flour with the baking powder in a separate bowl.
- 3. Stir the dry ingredients into the egg mixture.
- 4. Pour in the oil and the Fanta soda and mix everything well until you have a smooth batter.
- 5. Grease a baking pan with some fat.
- 6. Spread the batter evenly inside the pan.
- 7. Bake the cake in the preheated oven at 150 degrees Celsius fan mode for 25 minutes.
- 8. Remove the cake from the oven.
- 9. Let it cool down completely.
- 10. Let the mandarin oranges drain well from the can.
- 11. Whip the cream until stiff, sprinkling in 3 packets of vanilla sugar and a teaspoon of cream stabilizer (an additive to help the cream hold its shape) while doing so.
- 12. Stir the sour cream (a creamy dairy product with a tangy taste) with 2 packets of vanilla sugar until smooth.
- 13. Fold in the drained mandarin oranges into the sour cream mixture.
- 14. Whip the prepared cream briefly.
- 15. Gently fold the cream into the mandarin sour cream mixture to keep it airy.
- 16. Spread the cream evenly over the cooled cake.
- 17. Place the cake in the refrigerator until the cream has set.
- 18. Sprinkle the finished cake with cinnamon sugar to taste.
