🍽️ Crispy Ham-Wrapped Endive from the Air Fryer

Ingredients
- 3 medium-sized chicory
- 3 slice/s Schwarzwälder ham
- 2 tbsp butter
- 2 tbsp flour
- 250 ml milk
- 100 g cheese, grated
- salt and pepper
- nutmeg
Instructions
- 1. Remove the outer leaves of the endive and cut out the hard, bitter core in the center in a wedge shape.
- 2. Bring a pot of water and salt to a boil.
- 3. Place the endive in the boiling salted water for 10 minutes (this is called blanching, i.e., cooking briefly in boiling water).
- 4. Lift the endive out with a slotted spoon and let it drain well.
- 5. Wrap one slice of ham diagonally around each endive head.
- 6. Place the wrapped endives in the basket of the air fryer.
- 7. Preheat the air fryer to 180 °C and bake the endive for 3 minutes so that the ham releases its flavor.
- 8. In the meantime, melt some butter in a pan on the stove.
- 9. Add flour to the melted butter and stir briefly without letting it turn brown.
- 10. Deglaze the mixture with cold milk and stir vigorously to prevent lumps from forming.
- 11. Let the sauce simmer for a few minutes over low heat.
- 12. Stir about half of the grated cheese into the sauce until it has melted.
- 13. If the sauce is too thick, add a little more milk.
- 14. Season the sauce with salt, pepper, and a pinch of nutmeg.
- 15. Pour the finished sauce evenly over the endive in the air fryer basket.
- 16. Gently move the endive in the sauce to ensure everything is well covered.
- 17. Sprinkle the remaining grated cheese on top of the endive.
- 18. Bake the dish at 180 °C for approx. 12 minutes until the cheese is golden brown.
