🍰 Juicy Plum Crumble Cake

Ingredients
- 550 g plum(s) (fresh, pitted, halved lengthwise)
- 150 g butter (melted)
- 150 g sugar
- 3 egg yolks
- 1 packet vanilla sugar (or some vanilla flavoring)
- 300 g flour
Instructions
- 1. Melt the butter in a saucepan over medium heat.
- 2. Stir the sugar into the melted butter until well combined.
- 3. Remove the pan from the heat and let the mixture cool down slightly.
- 4. Place the egg yolks and flour in a large mixing bowl.
- 5. Mix the egg yolks and flour briefly with a hand mixer.
- 6. Pour in the cooled butter-sugar mixture (and vanilla extract if desired).
- 7. Mix with the hand mixer only until a crumbly dough forms.
- 8. Take three quarters of the crumb mixture aside.
- 9. Press the remaining crumbs into a greased springform pan.
- 10. Press the crumbs firmly to create an even base.
- 11. Halve the plums.
- 12. Place the plums closely side by side on the dough base.
- 13. Make sure the plum pieces do not touch each other.
- 14. Sprinkle the remaining crumbs over the cake.
- 15. Sprinkle some sugar over the plums if they taste very sour.
- 16. Preheat the oven to 180 degrees.
- 17. Bake the cake for 45 to 50 minutes.
- 18. Cover the cake with aluminum foil if the crumbs become too dark.
