🍰 Low-Fructose Cheesecake in the Air Fryer

Ingredients
- 500 g curd cheese
- 50 g wheat flour
- 1 tsp baking powder
- 4 egg(s)
- Stevia ((Stevioside Silver), 7 measuring spoons)
- 5 g sugar
- 10 g rice syrup
- 1 pkg lemon zest
- 100 g butter (soft)
- 1 pkg bourbon vanilla flavor
- Fat for the pan
Instructions
- 1. Separate the eggs. Carefully separate the yolks from the whites.
- 2. Whip the egg whites until stiff peaks form (firm egg white foam).
- 3. Mix the flour and baking powder together in a small bowl.
- 4. Whisk the quark (curd cheese), soft butter, egg yolks, lemon zest, vanilla aroma, stevia, and rice syrup in a large bowl until smooth.
- 5. Add the flour mixture to the quark mixture and stir it in gently.
- 6. Fold the egg white foam into the batter in three additions until evenly distributed.
- 7. Lightly grease an 18-centimeter springform pan.
- 8. Pour the batter into the prepared pan.
- 9. Cover the pan tightly with aluminum foil.
- 10. Preheat the air fryer to 180 °C.
- 11. Place the covered pan in the air fryer and bake the cake for 40 minutes.
- 12. Remove the pan, take off the foil, and bake for another 10 minutes without covering until the top is golden brown.
- 13. Let the cake cool down completely in the pan.
- 14. Carefully turn the cake out onto a cooling rack.
- 15. Slice the cake into portions and enjoy.
