  1. 1. Separate the eggs. Carefully separate the yolks from the whites.
  2. 2. Whip the egg whites until stiff peaks form (firm egg white foam).
  3. 3. Mix the flour and baking powder together in a small bowl.
  4. 4. Whisk the quark (curd cheese), soft butter, egg yolks, lemon zest, vanilla aroma, stevia, and rice syrup in a large bowl until smooth.
  5. 5. Add the flour mixture to the quark mixture and stir it in gently.
  6. 6. Fold the egg white foam into the batter in three additions until evenly distributed.
  7. 7. Lightly grease an 18-centimeter springform pan.
  8. 8. Pour the batter into the prepared pan.
  9. 9. Cover the pan tightly with aluminum foil.
  10. 10. Preheat the air fryer to 180 °C.
  11. 11. Place the covered pan in the air fryer and bake the cake for 40 minutes.
  12. 12. Remove the pan, take off the foil, and bake for another 10 minutes without covering until the top is golden brown.
  13. 13. Let the cake cool down completely in the pan.
  14. 14. Carefully turn the cake out onto a cooling rack.
  15. 15. Slice the cake into portions and enjoy.
