🍝 Classic Spaghetti Carbonara

Ingredients
- 250 g spaghetti
- 80 g pancetta (or streaky bacon)
- 3 tbsp olive oil
- 3 egg yolks
- 50 g parmesan
- 1 pinch(es) pepper
Instructions
- 1. Fry the bacon cubes in a little oil in the pan until crispy.
- 2. Mix the egg yolks with the grated Parmesan in a separate bowl.
- 3. Cook the spaghetti in salted water until al dente (firm to the bite).
- 4. Remove the pan with the bacon from the heat.
- 5. Add the drained pasta to the pan.
- 6. Stir the pasta with a splash of pasta water and the egg yolk-Parmesan mixture until creamy.
- 7. Serve the Carbonara immediately with a little extra Parmesan.
