🍕 Thick Pan Pizza with Cheese Crust

Ingredients
- 500 g wheat flour Type 405
- 1 packet dry yeast ((7 g) or ½ cube fresh yeast)
- 1 tsp sugar
- 1.5 tsp salt
- 30 ml olive oil
- 200 ml water (lukewarm, up to 250 ml)
- 300 g tomatoes, pureed
- 2 clove(s) garlic (chopped)
- 1 small onion(s) (chopped)
- 1 tsp oregano (dried)
- 0.5 tsp basil (dried)
- salt and pepper
- as desired mozzarella (grated)
- as desired bell pepper(s)
- as desired salami (poultry salami)
- as desired onion(s), red
- 350 g Gouda (or Emmentaler, cut into strips)
- 1 egg white
Instructions
- 1. Preheat the oven to 220 degrees Celsius using top and bottom heat.
- 2. Mix the yeast with the sugar in a small bowl.
- 3. Pour in a splash of lukewarm water and stir until the yeast dissolves.
- 4. Let the mixture stand for five minutes until it foams.
- 5. Add the flour, the yeast mixture, the salt, the olive oil, and the remaining water to a large bowl.
- 6. Knead the dough vigorously until it pulls away from the sides of the bowl.
- 7. If the dough is still sticky, add a little more flour.
- 8. Cover the bowl with plastic wrap.
- 9. Let the dough rise in a warm place for one and a half hours.
- 10. Heat the oil in a small pot.
- 11. Sauté the chopped onion and chopped garlic in it until the onion becomes soft and translucent.
- 12. Deglaze the onions with the pureed tomatoes.
- 13. Turn off the stove.
- 14. Season the sauce with pepper, salt, dried oregano, and dried basil.
- 15. Divide the risen dough into three equal parts.
- 16. Sprinkle some flour on a work surface.
- 17. Roll out each dough part into a circle.
- 18. Be careful not to knead the dough too much so it does not become tough.
- 19. If the dough is too firm, let it rest covered for ten minutes.
- 20. Place the dough on a pizza pan or baking sheet.
- 21. Gently pull the edge of the dough up.
- 22. Brush the edge only with egg white.
- 23. Place the cut cheese strips on the edge.
- 24. Fold the dough over the cheese.
- 25. Press the edge firmly so that the cheese cannot leak out.
- 26. Spread the tomato sauce evenly over the pizza.
- 27. Top the pizza to your liking with ingredients such as grated mozzarella, poultry salami, red onions, and green peppers.
- 28. Bake the pizza for 18 to 20 minutes in the oven.
