🥗 Refreshing Kritharaki Pasta Salad

Ingredients
- 1 lemon(s), juice from it
- 30 ml olive oil
- 2 garlic clove(s) (pressed)
- to taste salt and pepper
- 250 g Kritharaki (rice-shaped pasta)
- 15 cocktail tomatoes
- 80 g olives, black (pitted)
- 1 small onion(s), red
- 1 bunch parsley (fresh, small)
- 250 g feta cheese (or shepherd's cheese)
Instructions
- 1. Cook the Kritharaki pasta in lightly salted water for 10 to 12 minutes until al dente. Tip: Kritharaki are small, rice-shaped pasta pieces. Drain the pasta, rinse it immediately with cold water to stop the cooking process, and let it cool down.
- 2. Whisk lemon juice, olive oil, garlic, salt, and pepper in a small bowl until the dressing is well combined.
- 3. Add the cooled pasta to the dressing and mix everything thoroughly. Gently fold in the remaining ingredients. Crumble the feta cheese over the top by hand.
