🍽️ Crispy Vegetarian Airfryer Burgers with Carrot Patties

Ingredients
- 3 tbsp whole milk (room temperature)
- 100 ml water, lukewarm
- 21 g fresh yeast (0.5 cube)
- 1 tbsp honey
- 1 pinch(es) sea salt
- 50 g butter, soft
- 250 g wheat flour Type 550 (sifted)
- some whole milk
- 1 egg(s)
- 2 tsp sesame seeds
- 250 g carrot(s) (peeled and finely grated)
- 150 g zucchini (seeded and finely grated)
- 2 shallot(s) (peeled)
- 100 g whole grain oat flakes
- 2 egg(s)
- 100 g cheese, grated
- 30 g pine nuts (roasted)
- 1 tbsp sugar
- 1 clove(s) garlic (peeled)
- 1 tsp mustard seeds
- 2 sprig(s) thyme (picked)
- 1 pinch(es) sea salt and pepper
Instructions
- 1. Put water, milk, and honey into a large bowl.
- 2. Crumble the yeast finely into the liquid and stir everything well.
- 3. Let the yeast mixture rise in a warm place for 5 to 10 minutes until it foams.
- 4. Add salt, butter, flour, and an egg to the yeast mixture.
- 5. Knead the dough vigorously until it is smooth and elastic.
- 6. Shape the dough into a ball and place it on a baking sheet dusted with flour.
- 7. Let the dough rise for approx. 45 minutes at room temperature.
- 8. Whisk the remaining milk with an egg in a small bowl.
- 9. Cut the risen dough into equal pieces and shape them into buns.
- 10. Brush the buns with the milk-egg mixture.
- 11. Generously sprinkle sesame seeds over the brushed buns.
- 12. Preheat the air fryer to 180 °C.
- 13. Place the buns in the air fryer and bake them for 10 to 12 minutes until crispy.
- 14. Grate the carrots and shallots very finely using a food processor or grater.
- 15. Crush the garlic, mustard seeds, and plucked thyme leaves into a paste (e.g., using a mortar).
- 16. Mix the vegetable paste with the remaining ingredients for the patties in a bowl.
- 17. Let the patty mixture rest for 20 minutes to allow the flavors to meld.
- 18. Shape small, flat patties (burger patties) from the mixture.
- 19. Preheat the air fryer to 160 °C.
- 20. Fry the patties for 6 to 8 minutes in the air fryer until cooked through.
