  1. 1. Warm the milk slightly until it is lukewarm.
  2. 2. Pour the lukewarm milk into a mixing bowl.
  3. 3. Crumble the fresh yeast directly into the milk.
  4. 4. Add 20 grams of sugar to the milk and yeast mixture.
  5. 5. Stir everything well until the yeast and sugar have dissolved.
  6. 6. Let the mixture rest for 10 to 15 minutes to activate the yeast.
  7. 7. Now add all the remaining ingredients for the dough into the bowl.
  8. 8. Knead the dough well until it is smooth and homogeneous.
  9. 9. Cover the bowl with a damp cloth.
  10. 10. Place the dough in a warm spot.
  11. 11. Let the dough rise for about 1.5 hours or longer.
  12. 12. Wait until the dough volume has doubled.
  13. 13. Knead the pine nuts, chocolate chips, and cranberries into the finished dough.
  14. 14. Grease a baking pan or line it with baking paper.
  15. 15. Place the dough into the prepared pan.
  16. 16. Cover the pan again with the damp cloth.
  17. 17. Let the dough rise again for 30 to 40 minutes in a warm spot.
  18. 18. Cut a cross shape into the surface of the dough with a sharp knife.
  19. 19. This releases the tension in the dough.
  20. 20. Pour half a cup of water into the container of the air fryer.
  21. 21. Place the baking pan into the cold air fryer.
  22. 22. Preheat the air fryer to 150 °C convection and bake the panettone for 20 minutes.
  23. 23. Open the air fryer after 5 to 10 minutes of baking time.
  24. 24. Brush the surface of the panettone with some butter.
  25. 25. Close the air fryer and finish baking for the remaining time.
  26. 26. Remove the panettone from the pan.
  27. 27. Let it cool completely on a cake rack.
