🍰 Fluffy Panettone with Chocolate, Nuts, and Berries

Ingredients
- 200 ml milk, lukewarm
- 0.5 cube yeast (fresh)
- 100 g sugar
- 500 g flour
- 2 vanilla pods (the seeds from them)
- 1 pinch sea salt
- 2 egg yolks
- 100 g butter (soft)
- 1 tsp lemon zest
- 60 g pine nuts
- 80 g chocolate chips (dark)
- 60 g cranberries
- 1 tbsp butter (for brushing)
Instructions
- 1. Warm the milk slightly until it is lukewarm.
- 2. Pour the lukewarm milk into a mixing bowl.
- 3. Crumble the fresh yeast directly into the milk.
- 4. Add 20 grams of sugar to the milk and yeast mixture.
- 5. Stir everything well until the yeast and sugar have dissolved.
- 6. Let the mixture rest for 10 to 15 minutes to activate the yeast.
- 7. Now add all the remaining ingredients for the dough into the bowl.
- 8. Knead the dough well until it is smooth and homogeneous.
- 9. Cover the bowl with a damp cloth.
- 10. Place the dough in a warm spot.
- 11. Let the dough rise for about 1.5 hours or longer.
- 12. Wait until the dough volume has doubled.
- 13. Knead the pine nuts, chocolate chips, and cranberries into the finished dough.
- 14. Grease a baking pan or line it with baking paper.
- 15. Place the dough into the prepared pan.
- 16. Cover the pan again with the damp cloth.
- 17. Let the dough rise again for 30 to 40 minutes in a warm spot.
- 18. Cut a cross shape into the surface of the dough with a sharp knife.
- 19. This releases the tension in the dough.
- 20. Pour half a cup of water into the container of the air fryer.
- 21. Place the baking pan into the cold air fryer.
- 22. Preheat the air fryer to 150 °C convection and bake the panettone for 20 minutes.
- 23. Open the air fryer after 5 to 10 minutes of baking time.
- 24. Brush the surface of the panettone with some butter.
- 25. Close the air fryer and finish baking for the remaining time.
- 26. Remove the panettone from the pan.
- 27. Let it cool completely on a cake rack.
