🍽️ Crispy Mediterranean Bread Salad with Star Anise Oil

Ingredients
- 100 ml olive oil
- 5 star anise
- 1 baguette(s) (halved lengthwise and sliced into finger-thick slices)
- 1 clove(s) garlic (for rubbing)
- some oil ((star anise oil), for brushing)
- 100 g bell pepper(s), red (coarsely diced)
- 100 g bell pepper(s), yellow (coarsely diced)
- 100 g zucchini (sliced)
- 3 tbsp balsamic (white)
- 0.5 lemon(s) (juice and grated zest)
- 0.5 garlic clove(s) (finely diced)
- 100 g cherry tomato(es) (quartered)
- 70 ml oil (star anise oil)
- 1 pinch(es) sea salt
- pepper (black from the mill)
- 1 bunch basil (cut into strips)
- some powdered sugar
Instructions
- 1. Place the olive oil and star anise in a pot and gently heat the mixture to 70 °C.
- 2. Remove the pot from the heat and let the oil steep for 2 hours to allow the flavors to infuse.
- 3. Strain the oil through a fine sieve to remove the spice pieces, then set aside the finished star anise oil.
- 4. Cut the bell peppers into your desired shape, such as strips or cubes.
- 5. Toss the peppers with a spoonful of olive oil, a pinch of powdered sugar, and sea salt.
- 6. Preheat the air fryer to 180 °C and place the marinated peppers inside.
- 7. Cook the peppers for 10 minutes at 180 °C in the air fryer until they are slightly tender.
- 8. Rub the bread slices with a clove of garlic to infuse the bread with flavor.
- 9. Brush the rubbed bread slices evenly with the prepared star anise oil.
- 10. Cut the oil-brushed bread slices into coarse, bite-sized cubes.
- 11. Preheat the air fryer to 180 °C again if it has cooled down.
- 12. Toast the bread cubes for 3 to 4 minutes at 180 °C in the air fryer until they are crispy.
- 13. In a bowl, whisk together the balsamic vinegar, lemon juice, and lemon zest with the remaining star anise oil.
- 14. Season the marinade to taste with salt and black pepper.
- 15. Marinate the tomatoes as well in the prepared lemon-balsamic mixture.
- 16. Distribute the remaining marinated vegetables and tomatoes onto the serving plates.
- 17. Place the crispy bread cubes generously over the vegetables.
- 18. Garnish the finished salad with freshly chopped basil leaves and serve immediately.
