  1. 1. Finely chop the mint.
  2. 2. Pit the nectarine and dice the flesh into small cubes.
  3. 3. Drizzle the nectarine cubes with a little lemon juice.
  4. 4. Mix the nectarines with the jam and the chopped mint until well combined.
  5. 5. Lay the strudel pastry double-layered on your work surface.
  6. 6. Spread the nectarine filling onto the pastry, keeping about 2 centimeters of space from the edges.
  7. 7. Brush the pastry edges with the egg white.
  8. 8. Fold the two long sides of the pastry inward over the filling.
  9. 9. Roll the pastry tightly and snugly from one short end to the other.
  10. 10. Preheat the air fryer to 180 °C.
  11. 11. Melt the butter in a small pot or in the microwave.
  12. 12. Mix the melted butter with the powdered sugar.
  13. 13. Brush the pastry rolls on both sides with the butter-sugar mixture.
  14. 14. Place the rolls immediately into the preheated air fryer.
  15. 15. Bake the rolls for about 5 to 7 minutes until they are golden brown and crispy.
