🍽️ Crispy Nectarine Rolls from the Air Fryer

Ingredients
- 1 small bunch mint (fresh)
- 1 nectarine
- lemon juice
- 3 tbsp lemon jam
- 16 sheets strudel pastry (small sheets, yufka dough or phyllo dough)
- 1 egg white
- 2 tbsp butter
- 15 g powdered sugar
Instructions
- 1. Finely chop the mint.
- 2. Pit the nectarine and dice the flesh into small cubes.
- 3. Drizzle the nectarine cubes with a little lemon juice.
- 4. Mix the nectarines with the jam and the chopped mint until well combined.
- 5. Lay the strudel pastry double-layered on your work surface.
- 6. Spread the nectarine filling onto the pastry, keeping about 2 centimeters of space from the edges.
- 7. Brush the pastry edges with the egg white.
- 8. Fold the two long sides of the pastry inward over the filling.
- 9. Roll the pastry tightly and snugly from one short end to the other.
- 10. Preheat the air fryer to 180 °C.
- 11. Melt the butter in a small pot or in the microwave.
- 12. Mix the melted butter with the powdered sugar.
- 13. Brush the pastry rolls on both sides with the butter-sugar mixture.
- 14. Place the rolls immediately into the preheated air fryer.
- 15. Bake the rolls for about 5 to 7 minutes until they are golden brown and crispy.
