🍽️ Crispy Quinoa-Spelt Pancakes from the Air Fryer

Ingredients
- 150 g quinoa (well rinsed)
- 300 ml water
- 300 ml whole milk
- 50 g sugar
- 1 vanilla pod (the seeds from it)
- 225 g spelt flour
- 50 g pine nuts (golden brown roasted)
- 2 tbsp baking powder
- 2 egg(s)
Instructions
- 1. Place the quinoa in a fine-mesh sieve.
- 2. Rinse the quinoa thoroughly under running water.
- 3. Continue rinsing until the running water is clear and no longer foamy.
- 4. Place the rinsed quinoa into a pot.
- 5. Pour in 300 milliliters of water.
- 6. Cook the quinoa for about 15 minutes until tender.
- 7. Drain any remaining water.
- 8. Let the cooked quinoa cool down completely.
- 9. Pour the milk (or a plant-based milk like almond or rice milk) into a saucepan.
- 10. Add the vanilla pod, sugar, and sea salt to the milk.
- 11. Bring the milk mixture to a boil.
- 12. Let the sweetened milk cool down as well.
- 13. Place the flour and baking powder into a large mixing bowl.
- 14. Mix the flour and baking powder well together.
- 15. Add the eggs to the flour mixture.
- 16. Add the cooled quinoa to the bowl.
- 17. Mix the eggs, quinoa, and flour well together.
- 18. Remove the vanilla pod from the cooled milk.
- 19. Stir the vanilla milk into the batter while stirring constantly.
- 20. Preheat the air fryer to 160 °C.
- 21. Grease the air fryer grill pan with butter or oil.
- 22. Lightly dust the greased pan with sugar.
- 23. Pour the batter into the prepared pan in portions.
- 24. Bake the pancakes in the preheated air fryer at 160 °C for about 5 minutes.
