  1. 1. Wash the sweet potatoes thoroughly under running water.
  2. 2. Place one sweet potato on the flat side of a large spoon.
  3. 3. Slice the sweet potato into thin slices using a sharp knife.
  4. 4. Make sure not to cut all the way through so the slices remain connected at the bottom.
  5. 5. Repeat this process for all sweet potatoes.
  6. 6. Finely chop the garlic cloves.
  7. 7. Pick the thyme and oregano leaves off the stems and chop them finely as well.
  8. 8. Mix the chopped herbs with the salt and soft butter in a small bowl.
  9. 9. Melt this herb butter over low heat in a pot or microwave until it is liquid.
  10. 10. Add the lemon juice, some salt, and the remaining butter into a separate small pot.
  11. 11. Melt this mixture over low heat as well until it is liquid.
  12. 12. Preheat the air fryer to 180 °C.
  13. 13. Brush the fan-cut potatoes generously with the herb butter.
  14. 14. Then brush the potatoes with the lemon-butter mixture.
  15. 15. Place the potatoes in the basket of the air fryer.
  16. 16. Cook the potatoes at 180 °C for 25 minutes until crispy.
