🍽️ Crispy Mediterranean Meatballs

Ingredients
- 80 g bread (or rolls, stale)
- 100 ml whole milk
- 1 pinch nutmeg
- 1 shallot (finely diced)
- 2 tbsp olive oil
- to taste garlic
- 300 g minced meat, mixed
- 1 egg
- 1 tbsp Dijon mustard
- 1 tsp, heaped paprika powder (Pimenton de la Vera, smoked paprika powder)
- 30 g thyme
- 50 g Parmesan (grated)
- 50 g tomatoes, dried (finely chopped)
- 1 lemon (zest of it)
- 1 pinch sea salt
- 1 pinch pepper (from the mill)
Instructions
- 1. Cut the bread or rolls into small cubes.
- 2. Pour the milk over the bread pieces and add a pinch of ground nutmeg.
- 3. Let the bread soak in the milk for a few minutes until fully saturated.
- 4. Squeeze the soaked bread firmly with your hands to remove excess milk.
- 5. Finely chop the shallots and the garlic.
- 6. Heat some olive oil in a small pan.
- 7. Sauté the shallots and garlic in the oil until they are lightly golden brown.
- 8. Remove the pan from the heat and let the onion mixture cool down completely.
- 9. Place the minced meat into a large mixing bowl.
- 10. Add the egg, mustard, paprika powder, dried tomatoes, lemon zest, and thyme.
- 11. Add the squeezed milk bread to the meat mixture.
- 12. Add the cooled onion mixture.
- 13. Knead all ingredients well with your hands until a homogeneous mass forms.
- 14. Check the consistency of the mixture.
- 15. If the mixture seems too wet or liquid, stir in some panko or breadcrumbs.
- 16. Gently fold the grated cheese into the meat mixture.
- 17. Season the meatball mixture with salt and black pepper to taste.
- 18. Shape the mixture into evenly sized meatballs.
- 19. Preheat the air fryer to 180 °C.
- 20. Place the meatballs in the basket of the air fryer.
- 21. Cook the meatballs for approx. 6 minutes in the air fryer until crispy.
- 22. Alternatively: Heat some oil in a frying pan over medium heat.
- 23. Fry the meatballs in the pan for approx. 4 minutes on each side until golden brown.
