  1. 1. Cut the bread or rolls into small cubes.
  2. 2. Pour the milk over the bread pieces and add a pinch of ground nutmeg.
  3. 3. Let the bread soak in the milk for a few minutes until fully saturated.
  4. 4. Squeeze the soaked bread firmly with your hands to remove excess milk.
  5. 5. Finely chop the shallots and the garlic.
  6. 6. Heat some olive oil in a small pan.
  7. 7. Sauté the shallots and garlic in the oil until they are lightly golden brown.
  8. 8. Remove the pan from the heat and let the onion mixture cool down completely.
  9. 9. Place the minced meat into a large mixing bowl.
  10. 10. Add the egg, mustard, paprika powder, dried tomatoes, lemon zest, and thyme.
  11. 11. Add the squeezed milk bread to the meat mixture.
  12. 12. Add the cooled onion mixture.
  13. 13. Knead all ingredients well with your hands until a homogeneous mass forms.
  14. 14. Check the consistency of the mixture.
  15. 15. If the mixture seems too wet or liquid, stir in some panko or breadcrumbs.
  16. 16. Gently fold the grated cheese into the meat mixture.
  17. 17. Season the meatball mixture with salt and black pepper to taste.
  18. 18. Shape the mixture into evenly sized meatballs.
  19. 19. Preheat the air fryer to 180 °C.
  20. 20. Place the meatballs in the basket of the air fryer.
  21. 21. Cook the meatballs for approx. 6 minutes in the air fryer until crispy.
  22. 22. Alternatively: Heat some oil in a frying pan over medium heat.
  23. 23. Fry the meatballs in the pan for approx. 4 minutes on each side until golden brown.
