  2. 2. Place the vegetables in a bowl.
  3. 3. Toss the vegetables with olive oil, salt, pepper, and your favorite herbs.
  4. 4. Preheat the air fryer to 180 °C.
  5. 5. Place the marinated vegetables in the air fryer basket.
  6. 6. Cook the vegetables for 20 minutes at 180 °C.
  7. 7. Dice the eggplant and bell pepper.
  8. 8. Add the fresh diced vegetables to the partially cooked beetroot mixture in the air fryer.
  9. 9. Press the garlic clove directly over the vegetables.
  10. 10. Continue cooking at 180 °C for another 20 minutes until everything is crispy.
  11. 11. Crumble the feta cheese over the finished vegetables.
  12. 12. Serve the vegetables warm immediately.
