🍽️ Crispy Roasted Vegetables with Feta

Ingredients
- 1 large beetroot (or 2 small)
- 4 carrots
- 1 sweet potato
- 1 eggplant
- 1 bell pepper (yellow)
- 1 clove garlic
- 0.5 pack feta cheese
- olive oil
- salt and pepper
- herbs (to taste)
Instructions
- 1. Cut the beetroot, carrots, and sweet potato into small cubes.
- 2. Place the vegetables in a bowl.
- 3. Toss the vegetables with olive oil, salt, pepper, and your favorite herbs.
- 4. Preheat the air fryer to 180 °C.
- 5. Place the marinated vegetables in the air fryer basket.
- 6. Cook the vegetables for 20 minutes at 180 °C.
- 7. Dice the eggplant and bell pepper.
- 8. Add the fresh diced vegetables to the partially cooked beetroot mixture in the air fryer.
- 9. Press the garlic clove directly over the vegetables.
- 10. Continue cooking at 180 °C for another 20 minutes until everything is crispy.
- 11. Crumble the feta cheese over the finished vegetables.
- 12. Serve the vegetables warm immediately.
