🍝 Cozy Lasagna Soup

Ingredients
- 2 tbsp olive oil
- 500 g minced meat, mixed
- 1 onion(s)
- 3 clove(s) garlic
- 1 liter beef broth
- 800 g tomatoes, chunky (from the can)
- 3 tbsp tomato paste
- 1 tsp oregano (dried)
- 1 tsp thyme (dried)
- 10 lasagna sheet(s)
- 150 g crème fraîche
- salt and pepper
- to taste parmesan
Instructions
- 1. Heat one tablespoon of olive oil in a large pot over medium-high heat.
- 2. Add the ground meat to the pot.
- 3. Break the meat up into small pieces with a fork.
- 4. Season the meat with salt and pepper.
- 5. Fry the meat until it is crispy.
- 6. Dice the onion.
- 7. Finely chop the garlic.
- 8. Add the remaining olive oil to the pot.
- 9. Sauté the diced onions for about two minutes, stirring occasionally.
- 10. Wait until the onions are soft and translucent.
- 11. Add the chopped garlic.
- 12. Sauté the garlic for another 30 seconds.
- 13. Break the lasagna sheets into bite-sized pieces.
- 14. Add beef broth to the pot.
- 15. Add chopped tomatoes to the pot.
- 16. Add tomato paste to the pot.
- 17. Add the lasagna pieces to the pot.
- 18. Add oregano to the pot.
- 19. Add thyme to the pot.
- 20. Add rosemary to the pot.
- 21. Season the soup with salt and pepper.
- 22. Let the soup simmer on low heat.
- 23. Wait until the pasta pieces are soft and cooked through.
- 24. Taste the soup again and adjust the seasoning with salt and pepper if needed.
- 25. Serve the soup with a dollop of crème fraîche.
- 26. Add some grated Parmesan cheese on top.
