Ingredients
- 0.5 cube yeast
- 400 g wheat flour Type 405
- 1 tsp sugar
- 1 tsp turmeric
- 250 ml water (lukewarm)
- salt and pepper
- 400 g minced beef
- 100 g chorizo
- salt and pepper
- 1 large onion(s)
- 1 tbsp oil
- 1 tbsp sugar, brown
- 2 tbsp tomato paste
- 2 tbsp grain alcohol vinegar
- 150 ml water
- 4 plum(s) (or prunes)
- 8 slice(s) breakfast bacon
- 4 lettuce leaves
Instructions
- 1. Dissolve the yeast in the lukewarm water with the sugar.
- 2. Add the yeast water, the flour, the salt, the pepper, and the turmeric to the food processor.
- 3. Knead everything into a smooth dough.
- 4. Let the dough rise in a warm place for about 30 minutes.
- 5. Take the dough out of the bowl.
- 6. Divide it into 4 equal pieces.
- 7. Press a hole into the center of each piece with a cooking spoon.
- 8. Then, let the buns rise again, covered, in a warm place for about 15 minutes.
- 9. Preheat the oven to 200 degrees top/bottom heat.
- 10. Bake the buns for about 30 minutes.
- 11. Take them out of the oven.
- 12. Let them cool down.
- 13. Cut the chorizo for the patties into small pieces.
- 14. Mix them with the ground beef as well as salt and pepper.
- 15. Knead the minced meat mixture well.
- 16. Divide the mixture into 4 equal pieces.
- 17. Form the pieces into patties.
- 18. Let these rest in the refrigerator for about 30 minutes.
- 19. Peel the onion for the sauce.
- 20. Halve it and cut it into thin strips.
- 21. Sweat them in a pot with 1 tbsp of oil.
- 22. Wait until the onions have a light brown color.
- 23. Add the brown sugar.
- 24. Let it caramelize.
- 25. Add the tomato paste.
- 26. Sweat it briefly.
- 27. Pour in vinegar and water.
- 28. Let everything reduce until a thick onion broth has formed.
- 29. Heat a grill pan or grill.
- 30. Fry the patties on both sides for about 5 minutes each.
- 31. Add the bacon.
- 32. Fry it until crispy.
- 33. Pit the plums.
- 34. Quarter them.
- 35. At the end of the frying time, fry them together with the meat and bacon for about 2 minutes.
- 36. Take the meat, bacon, and plums off the grill or out of the pan.
- 37. Keep them warm.
- 38. Cut the buns apart.
- 39. Grill the cut side briefly.
- 40. In the meantime, wash the lettuce leaves.
- 41. Pat them dry.
- 42. Place the lettuce leaf on the bottom bun.
- 43. Put the patty on it.
- 44. Add the sauce to the meat.
- 45. Distribute the bacon on top.
- 46. Place the plums on top.
- 47. Close with the top bun.
