🍝 Classic Spätzle Dough – Perfect Results Every Time

Ingredients
- 400 g spätzle flour (or regular flour)
- 4 egg(s)
- 1 tsp salt
- 250 ml water, lukewarm (possibly more)
- some butter
Instructions
- 1. Put flour, salt, and eggs into a large bowl.
- 2. Mix the ingredients by hand or using an electric mixer.
- 3. Add the lukewarm water gradually.
- 4. Stir continuously until a thick, sticky dough forms.
- 5. Drag a cooking spoon through the mixture to check the consistency.
- 6. The mixture should offer slight resistance.
- 7. Let the dough rest for about 15 minutes.
- 8. This gives the gluten in the flour time to develop.
- 9. Stir the dough briefly again after the resting period.
- 10. Add one or two teaspoons of water if necessary.
- 11. Ensure the consistency is correct.
- 12. Bring about 2 liters of water to a boil in a pot.
- 13. Add some salt to the boiling water.
- 14. Prepare a bowl for the finished spätzle.
- 15. Add a little butter to the bowl.
- 16. This prevents the spätzle from sticking.
- 17. Wait until the water is boiling vigorously.
- 18. Fill the dough into the spätzle press.
- 19. Press the noodles directly into the boiling water.
- 20. Let the spätzle boil briefly.
- 21. Lift the spätzle out immediately with a slotted spoon.
- 22. Do this as soon as they float to the surface.
- 23. Place the spätzle in the prepared bowl.
- 24. Repeat this process until all the dough is used up.
- 25. Place the spätzle in a warm oven.
- 26. This keeps them warm.
- 27. Serve the spätzle immediately once all are cooked.
