🍽️ Spicy Meat Burritos with Cheese

Ingredients
- 600 g minced meat
- 280 g corn
- 320 g kidney beans
- 1 clove(s) garlic
- 1 small onion(s)
- 1 small can(s) tomatoes, chunky
- olive oil
- 2 chili pepper(s)
- 1 tsp cayenne pepper
- 1 tsp paprika powder, sweet
- 0.5 tsp chili flakes
- 1 tsp cumin
- 1 tsp salt
- 1 tsp pepper
- 1 handful cilantro (with stems)
- 1 avocado(s)
- 200 g feta cheese
- some cheddar cheese (grated)
- 8 wrap(s) (corn tortillas)
- crème fraîche (optional)
Instructions
- 1. Put three small pinches of salt, cumin, cayenne pepper, paprika powder, and chili flakes into a small bowl.
- 2. Add finely chopped garlic and two tablespoons of olive oil to the bowl.
- 3. Stir the spice mixture well.
- 4. Let the marinade sit for a short while to allow the flavors to develop.
- 5. Heat some olive oil in a pan.
- 6. Brown the minced meat in the pan.
- 7. Finely chop the onion.
- 8. Finely chop the chili peppers.
- 9. Add the onion and chili peppers to the meat.
- 10. Halve the chili pepper lengthwise and remove the seeds if you prefer it less spicy.
- 11. Add the prepared spice marinade to the meat.
- 12. Roast everything briefly.
- 13. Season the filling with pepper.
- 14. Add the beans to the pan.
- 15. Add the corn to the pan.
- 16. Add the tomatoes to the pan.
- 17. Finely chop the cilantro, including the stems.
- 18. Stir the cilantro into the filling.
- 19. Let the filling simmer for about one minute.
- 20. Peel the avocado.
- 21. Remove the pit of the avocado.
- 22. Slice the avocado into strips.
- 23. Place three avocado strips in the center of a corn tortilla.
- 24. Crumble some feta cheese onto the avocado.
- 25. Add two tablespoons of the minced meat mixture to the tortilla.
- 26. Fold the right and left sides of the tortilla towards the center.
- 27. Roll the tortilla up tightly.
- 28. Place the rolled tortillas in a baking dish.
- 29. Make sure the tortillas do not unroll.
- 30. Arrange all tortillas side by side in the dish.
- 31. Sprinkle the burritos with the remaining minced meat mixture.
- 32. Sprinkle the burritos with the cheddar cheese.
- 33. Preheat the oven to 180 degrees Celsius.
- 34. Bake the burritos for about 6 to 7 minutes in the oven.
- 35. Decorate the finished burritos with crème fraîche.
- 36. Decorate the burritos with fresh cilantro.
