  1. 1. Clean the liver thoroughly by removing all fat edges, sinews, and membranes.
  2. 2. Coat the liver slices in flour until they are evenly covered.
  3. 3. Season the floured slices generously with pepper.
  4. 4. Slice the apple thinly.
  5. 5. Slice the onion thinly.
  6. 6. Fry the liver in batches in butter.
  7. 7. Fry each side of the liver for about one to two minutes until golden brown.
  8. 8. Remove the fried liver from the pan.
  9. 9. Keep the liver warm in the oven at about 100 degrees Celsius.
  10. 10. Sauté the apple slices in the remaining butter and pan residues.
  11. 11. Sauté the onion slices together with the apples.
  12. 12. Add a little more butter and sugar if needed.
  13. 13. Caramelize the apples and onions until they are soft and sweet.
  14. 14. Season the warm liver finally with salt.
  15. 15. Serve the liver together with the caramelized apples and onions.
  16. 16. Serve mashed potatoes as a classic side dish accompaniment.
