Ingredients
- 2 small zucchini
- 1 eggplant(s)
- 2 bell pepper(s)
- 25 small cherry tomatoes
- 1 tsp thyme (coarsely chopped, fresh)
- 1 tsp oregano (coarsely chopped, fresh)
- 1 small rosemary sprig(s) (coarsely chopped)
- 3 garlic clove(s) (coarsely chopped)
- pepper (freshly ground)
- 40 ml olive oil (good quality)
- 1 packet feta cheese
Instructions
- 1. Choose your favorite vegetables, such as zucchini, eggplant, bell peppers, and cherry tomatoes. Cut everything into roughly equal-sized cubes so they cook evenly. Add the coarsely chopped herbs, pressed garlic, and feta cubes.
- 2. Season the mixture generously with black pepper and drizzle with olive oil. Mix everything well in a baking dish. Place the tray in the oven for 15 minutes at 200 degrees convection. Take it out, stir the vegetables gently, and put it back in the oven.
- 3. After another 15 minutes, the vegetables are done. Serve them as a side dish or together with fresh baguette.
