  1. 1. Choose your favorite vegetables, such as zucchini, eggplant, bell peppers, and cherry tomatoes. Cut everything into roughly equal-sized cubes so they cook evenly. Add the coarsely chopped herbs, pressed garlic, and feta cubes.
  2. 2. Season the mixture generously with black pepper and drizzle with olive oil. Mix everything well in a baking dish. Place the tray in the oven for 15 minutes at 200 degrees convection. Take it out, stir the vegetables gently, and put it back in the oven.
  3. 3. After another 15 minutes, the vegetables are done. Serve them as a side dish or together with fresh baguette.
