🍽️ Oven-baked stuffed zucchini with cheese filling

Ingredients
- 2 Zucchini (each approx. 300 - 340 g)
- 150 g cream cheese
- 100 g mushrooms
- 1 small onion(s)
- 1 clove(s) garlic
- to taste cheddar cheese (or Gouda, grated, approx. 80 - 100 g)
- salt and pepper
Instructions
- 1. Wash the zucchini thoroughly.
- 2. Cut the zucchini in half lengthwise.
- 3. Carefully scoop out the inside of the zucchini halves with a spoon without damaging the skin.
- 4. Finely chop the removed zucchini flesh.
- 5. Finely dice the mushrooms, onions, and garlic.
- 6. Mix the chopped zucchini flesh with the diced mushrooms, onions, and garlic.
- 7. Stir the cream cheese into the vegetable mixture.
- 8. Season the filling generously with salt and pepper.
- 9. Mix all ingredients well until a homogeneous filling is formed.
- 10. Fill the zucchini halves with the mixture.
- 11. Smooth the surface of the filling.
- 12. Lightly grease a baking dish with oil.
- 13. Place the stuffed zucchini in the prepared baking dish.
- 14. Generously sprinkle the zucchini with grated Cheddar or Gouda cheese.
- 15. Preheat the oven to 200 degrees Celsius (top and bottom heat).
- 16. Place the baking dish in the preheated oven.
- 17. Bake the zucchini for about 20 to 25 minutes.
- 18. Remove the zucchini when the cheese on top is golden brown and bubbling.
- 19. Serve the stuffed zucchini hot.
- 20. Serve with cooked rice or fresh baguette slices as a side dish.
