  1. 1. Crush the butter cookies into fine crumbs and mix them with the melted butter. Press the mixture firmly into a baking paper-lined pan or a springform pan, creating a small edge if you like. Place the pan in the refrigerator for a while to let the crust set.
  2. 2. Juice the limes and grate the zest of one lime. Make sure to use only the green outer layer, as the white inner layer tastes bitter. Always use untreated organic limes for the best flavor, as the peel of non-organic limes is not edible.
  3. 3. Whisk together the sweetened condensed milk, the egg yolks, the lime zest, and the lime juice. Pour the mixture over the prepared cookie crust.
  4. 4. Bake the pie at 180 degrees Celsius (convection) for 15 minutes in the oven.
  5. 5. Let the pie cool down to room temperature after baking, then place it in the refrigerator for at least four hours to set.
  6. 6. Mix the sugar with cream of tartar and whip the ice-cold cream until stiff. Spread the whipped cream over the pie and decorate it with small lime pieces.
