  1. 1. Put a portion of the sugar and some lukewarm milk into a small bowl.
  2. 2. Stir in the yeast.
  3. 3. Let the mixture stand for five minutes to activate the yeast.
  4. 4. Add the flour, remaining sugar, salt, melted butter, egg yolk, the yeast mixture, and the rest of the milk to a large bowl.
  5. 5. Knead the dough until it pulls away from the sides of the bowl.
  6. 6. Shape the dough into a smooth ball.
  7. 7. Place the ball back into the bowl.
  8. 8. Cover the bowl with plastic wrap.
  9. 9. Place the bowl in a warm spot.
  10. 10. Let the dough rise for two hours.
  11. 11. Divide the risen dough into twelve equal pieces.
  12. 12. Shape the pieces into small balls.
  13. 13. Lightly grease a baking dish (approx. 30 x 20 cm).
  14. 14. Place the dough balls in the dish.
  15. 15. Cover the dish with plastic wrap again.
  16. 16. Let the rolls rise for another hour.
  17. 17. Preheat the oven to 190 degrees Celsius (convection setting).
  18. 18. Bake the rolls for 28 to 30 minutes until golden brown.
  19. 19. Brush the hot rolls with melted butter immediately after baking.
  20. 20. Serve the rolls warm.
  21. 21. Make sure to prepare them fresh and serve right away, as they dry out quickly.
  22. 22. Good companions are salads, meat, fish, or soups.
  23. 23. Note: These rolls are richer than standard bread rolls thanks to the egg yolk and butter.
  24. 24. They are slightly larger and definitely filling.
  25. 25. In taste, they resemble milk rolls or brioche.
