  1. 1. Mix low-fat quark, grated cheese, and eggs into a thick batter. Spread it onto a baking sheet lined with parchment paper. Bake the dough at 180 degrees Celsius with top and bottom heat for about 20 minutes in a preheated oven. Let it cool down completely.
  2. 2. Whisk all ingredients for the sauce together in a bowl.
  3. 3. Fry the minced meat in a pan with salt and pepper until crumbly. Slice the pickles and add them to the meat. Spread two-thirds of the sauce over the cooled dough. Place the still warm meat on top and let the processed cheese slices melt over it.
  4. 4. Place lettuce and optional tomatoes on top. Spread the remaining sauce. Roll the dough tightly using the parchment paper so that the roll looks like a sponge cake roll.
  5. 5. Make sure not to use too much filling, so that the roll does not become too thick and the filling bulges out at the ends.
