🍽️ Crispy Aubergine Gratin with Tomato Cream

Ingredients
- 500 g eggplant(s)
- 6 tbsp olive oil
- salt and pepper
- 0.5 bunch parsley (flat)
- 1 can pizza tomatoes
- 1 clove garlic
- sugar
- 1 pinch cayenne pepper
- 100 g crème fraîche
- 50 g hard cheese (Italian, grated)
Instructions
- 1. Prepare a baking tray and lightly coat it with oil.
- 2. Remove the stems from the aubergines.
- 3. Slice the aubergines into rounds about half a centimeter thick.
- 4. Season both sides of the slices with salt and pepper.
- 5. Place the seasoned aubergine slices on the prepared tray.
- 6. Drizzle the slices with a little oil.
- 7. Preheat the oven to 200 degrees.
- 8. Bake the aubergines in the preheated oven on the middle rack.
- 9. Do not use fan-assisted heat.
- 10. Bake the slices for about 30 to 35 minutes.
- 11. Pick the green leaves from the parsley stems.
- 12. Chop the parsley leaves roughly.
- 13. Put the pizza tomatoes into a bowl.
- 14. Add one tablespoon of oil to the tomatoes.
- 15. Add half of the chopped parsley to the tomatoes.
- 16. Add the pressed garlic clove to the tomatoes.
- 17. Season the tomato mixture with a pinch of sugar.
- 18. Season the mixture with cayenne pepper.
- 19. Season the mixture with salt and pepper.
- 20. Take a separate bowl.
- 21. Put the crème fraîche into the bowl.
- 22. Add the grated cheese to the crème fraîche.
- 23. Stir the crème fraîche and cheese together thoroughly.
- 24. Take a baking dish with dimensions of about 25 by 20 centimeters.
- 25. Lightly coat the baking dish with oil.
- 26. Put a spoonful of tomato sauce into the baking dish.
- 27. Place a layer of aubergine slices on the sauce.
- 28. Repeat the layering alternately with sauce and aubergines.
- 29. Finish the layering with the tomato sauce.
- 30. Spread the crème fraîche and cheese mixture evenly over the top sauce.
- 31. Bake the dish in the preheated oven at 200 degrees on the middle rack.
- 32. Do not use fan-assisted heat.
- 33. Bake the dish for 15 minutes.
- 34. Take the dish out of the oven when it is golden brown.
- 35. Sprinkle the remaining parsley over the casserole.
