🍽️ Low-Carb Peasant Stew

Ingredients
- 400 g ground beef
- 300 g carrot(s)
- 100 g tomato paste
- 600 ml vegetable broth
- 2 m.-large bell pepper(s)
- 1 m.-large onion(s)
- 2 clove(s) garlic
- 3 tbsp crème fraîche (or sour cream)
- salt and pepper
Instructions
- 1. Heat a large pot and fry the minced meat over high heat.
- 2. Finely chop the onion and garlic and add them to the meat.
- 3. Peel the carrots and slice them into small rounds.
- 4. Add the vegetables to the meat and continue frying for five minutes, stirring occasionally.
- 5. Stir in the tomato paste and mix well.
- 6. Deglaze the pot with the broth.
- 7. Bring the mixture to a boil.
- 8. Let the pot simmer covered on low heat for 40 minutes.
- 9. Cut the bell pepper into small strips.
- 10. Add the bell pepper about 10 minutes before the end of the cooking time.
- 11. Season the dish to taste with salt and pepper at the end.
- 12. Serve the stew.
- 13. Add a dollop of crème fraîche to each plate.
