🍽️ Red Lentil Curry with Sweet Potatoes

Ingredients
- 450 g sweet potato(es)
- 1 large bell pepper(s), red
- 2 clove(s) of garlic
- 2 medium-sized onion(s)
- 1 tbsp olive oil
- 2 tbsp tomato paste
- 2 tsp curry powder
- 2 tsp turmeric powder
- 1 tsp garam masala
- salt and pepper
- 200 g lentils, red
- 500 ml coconut milk
- 250 ml vegetable broth
Instructions
- 1. Peel the sweet potatoes.
- 2. Cut the sweet potatoes into small cubes.
- 3. Cut the bell pepper into cubes.
- 4. Peel the garlic.
- 5. Finely chop the onions.
- 6. Heat the olive oil in a large pot.
- 7. Sauté the onions in the hot oil.
- 8. Wait until the onions are soft and translucent.
- 9. Press the garlic directly into the pot using a garlic press.
- 10. Fry the garlic briefly.
- 11. Add the cubed sweet potatoes and the bell pepper to the pot.
- 12. Stir in the tomato paste.
- 13. Add the spices.
- 14. Fry the entire mixture briefly.
- 15. Add the lentils to the pot.
- 16. Pour coconut milk over everything.
- 17. Add the vegetable broth.
- 18. Let the mixture simmer for about 25 minutes.
- 19. Let the curry rest for a day, as it tastes even better then.
- 20. You can also freeze the curry well.
