Ingredients
- 800 g white cabbage
- 1 medium-sized carrot(s)
- 1 small onion(s)
- 65 g sugar (white)
- 0.5 tsp salt
- 0.125 tsp pepper, black
- 60 ml milk
- 125 g mayonnaise
- 60 ml buttermilk
- 1.5 tbsp white wine vinegar
- 2.5 tbsp lemon juice (fresh)
- 0.25 tsp paprika powder
- 0.5 tsp mustard (optional)
Instructions
- 1. Cut the cabbage, carrots, and onions into very fine, thin strips about 2.5 centimeters long. You can do this by hand or use a food processor.
- 2. Combine the cabbage, carrots, and onions in a large bowl. Whisk the remaining ingredients in a separate bowl, adding the mustard if desired. Pour this mixture over the vegetables and season to taste.
- 3. Cover the bowl and refrigerate the coleslaw for at least 8 hours, preferably 12 to 15 hours, to let the flavors meld. Remove it from the fridge 30 minutes before serving to let it reach room temperature.
- 4. This coleslaw pairs best as a side dish with hamburgers, pulled pork, hot dogs, grilled pork or chicken, and of course, any barbecue.
