  1. 1. Mix the flour, baking powder, and ground almonds in a large bowl. Add the sugar, speculaas spice, a pinch of salt, the eggs, and the butter. Knead the ingredients with a mixer using the dough hook until you have a smooth dough. Place the dough in the refrigerator for 30 minutes.
  2. 2. Take small portions of the dough and roll them out in your speculaas mold using a rolling pin. Grease the mold if necessary and dust it lightly with flour. Trim off the excess dough neatly with a floured knife.
  3. 3. Bake the cookies either directly in the mold (e.g., if silicone) or carefully turn them out and place them on baking sheets lined with parchment paper. Bake them for about 10 minutes at 180 degrees Celsius with top and bottom heat in the preheated oven.
