🍽️ Fluffy Burger Buns

Ingredients
- 200 ml water, lukewarm
- 4 tbsp milk
- 1 cube fresh yeast
- 35 g sugar
- 10 g salt
- 80 g butter (melted)
- 500 g wheat flour Type 550
- 1 large egg
- 1 egg
- 2 tbsp water
- 2 tbsp milk
- sesame seeds
Instructions
- 1. Mix the lukewarm water with the milk and sugar in a large bowl. I recommend using a food processor for this step. Crumble the fresh yeast into the liquid. Make sure to use fresh yeast, as dry yeast often doesn't provide the necessary fluffiness here.
- 2. Let the mixture rest for about 10 minutes until it becomes slightly foamy. Then add the flour, salt, one egg, and the melted butter. Knead the dough for about 5 minutes on high speed until it is smooth and elastic.
- 3. Cover the dough with a clean kitchen towel and let it rise in a warm place for about 1 hour, until it has doubled in size.
- 4. Divide the dough into 10 equal portions of about 90 grams each after the rising time. Shape them into round balls and place them with some space between them on a baking sheet lined with parchment paper. Since the dough is very sticky, lightly flour your work surface and hands to prevent sticking.
- 5. Cover the buns again and let them rise for another hour. Use this time to whisk together an egg wash made from one egg, 2 tablespoons of milk, and 2 tablespoons of water.
- 6. Gently brush the risen buns with the egg-milk-water mixture and sprinkle some sesame seeds on top. Bake them for 16 to 20 minutes in an oven preheated to 200 degrees Celsius (top and bottom heat). Remove them and let them cool down slightly.
- 7. These buns are perfect for burgers, pulled pork, or even for breakfast with Nutella.
