- 300 g dark chocolate (with at least 55% cocoa content)
- 350 g milk (at least 1.5% fat)

- 125 g sugar
- 300 g cream
Instructions
- 1. Choose a chocolate with at least 55 percent cocoa content for the best flavor.
- 2. Heat the milk to approximately 80 degrees Celsius.
- 3. Let the milk cool down to approximately 70 degrees Celsius so the eggs do not curdle later.
- 4. Beat the eggs in a mixing bowl until frothy.
- 5. Add the sugar to the eggs.
- 6. Continue beating until the sugar has completely dissolved.
- 7. Pour the cooled milk slowly in a thin stream into the egg mixture.
- 8. Continue beating to ensure a uniform mixture.
- 9. Use a ladle to add the milk portions to the bowl in a controlled manner.
