  1. 1. Fry the gyros meat in some oil until browned.
  2. 2. Preheat the oven to 180 degrees Celsius (convection mode).
  3. 3. Cook the pasta in plenty of salted water until al dente.
  4. 4. Drain the pasta.
  5. 5. Place the pasta in a baking dish.
  6. 6. Add the fried meat to the dish as well.
  7. 7. Wash the vegetables.
  8. 8. Chop the vegetables into small pieces.
  9. 9. Fry the vegetables in the same oil used for the meat.
  10. 10. Season the vegetables with salt and pepper.
  11. 11. Mix the vegetables with the meat and pasta in the baking dish.
  12. 12. Deglaze the pan juices with cream.
  13. 13. Stir in the sour cream (Schmand).
  14. 14. Add tomato paste and Metaxa (a Greek wine brandy).
  15. 15. Add more tomato paste or Metaxa to taste.
  16. 16. Season the sauce with salt, pepper, paprika powder, and other spices as desired.
  17. 17. Pour the sauce over the ingredients in the baking dish.
  18. 18. Sprinkle everything with cheese.
  19. 19. Place the dish in the preheated oven for 20 to 30 minutes.
